So this was an experiment that turned out very well. I was craving Broccoli in garlic sauce, and I didn’t want to spend the 10 bucks to get it. Plus, the nearest Chinese take-out place does not always take the most care in preparation. Their oils taste… a bit off. So I decided to find a recipe and use what I had in my fridge to get the job done. In short, it passed my best expectations.
I looked up a few recipes for homemade garlic sauce, and they all had special ingredients that I tend not to keep on hand, like peanut oil and corn starch. My take after this experiment is that you don’t need them.
Recipe for Asparagus in homemade Chinese style garlic sauce (Serves 1-2 people):
- I pound asparagus, trimmed of woody ends
- 1 tbsp minced garlic
- 1 tbsp soy sauce
- 1 tsp oil
- 1 tbsp flour
- 1 cup broth
- 1 tbsp sugar
- salt and pepper to taste
- 1 tsp red crushed pepper
- Add all ingredients except asparagus to a small bowl and combine.
- Place asparagus, cut lengthwise once, into a hot pan, and sauté until softening, 5 minutes.
- Add sauce mixture and continue to sauté, moving constantly, until you can divide asparagus with spatula.
- Serve immediately.
