I enjoy eggs as a vehicle for vegetables, and with a nice piece of crusty bread, I can&#8217;t think of a better breakfast. This recipe is a fairly typical\u00a0mash-up\u00a0for me, grab some eggs, veg and cheese out of the fridge, combine in a pan and serve on bread. Lots of options here, but this is a classic Florentine combination shown here.<\/p>\n<h3>Omelette Florentine Sandwich<\/h3>\n<ul>\n<li>2 slices hearty bread<\/li>\n<li>1 egg, whisked<\/li>\n<li>1 cup raw spinach, chopped<\/li>\n<li>1 small tomato, sliced<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>1 ounce mozzarella cheese, diced<\/li>\n<li>salt to taste<\/li>\n<\/ul>\n<ol>\n<li>Place the garlic, spinach and tomato in an oiled pan over medium heat, saut\u00e9 until spinach wilts.
